The last time I found myself left with a couple of those blackening bananas, I thought it was the perfect opportunity to try a new banana bread recipe. ;) So I headed on over to my favorite recipe site, Epicurious.com, and found the instructions to make the highly rated Banana Bread with Chocolate Chips and Walnuts.I made the recipe twice. The first time I followed the list of ingredients exactly as written, which gave me a moist bread but one that was much too sweet. Thinking it was worth trying again, the second time I reduced the amount of sugar to half, which resulted in a bread that was not quite as moist but rose more. Though not as sugary as before, I still thought that the sugar could be reduced more. Other than that, it was good; tasty enough to make again the next time I have overly ripe bananas.
